Buffalo Bites Mac & Cheese

This is a fun dish combining these two favorites. This is a great dish to bring to any party.

First start Cauliflower bites. While those are cooking start macaroni and cheese recipe.
Cauliflower bites:
1 head cauliflower
1 cup flour
1 cup plant milk
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
Buffalo sauce
1/4 cup hot sauce
1/2 tablespoon maple syrup
Preheat oven to 400 degrees. Line baking pan with parchment paper. Cut cauliflower into bite size pieces. Next, combine flour and spices and stir. Then, add plant milk and mix thoughly until smooth. Add in cauliflower pieces and stir coating each piece. Then, use spoon to place each peice evenly spread out onto lined baking pan. Bake for twenty minutes. Pull out of oven and baste each peice with Buffalo sauce. Return to oven and bake another twenty minutes until fork tender. Do not over cook.
Macaroni & Cheese
2 medium potatoes peeled and quartered
2 medium carrots cut in chunks
1 small to medium onion quartered or in chunks
1 lb macaroni noodles cooked
1/2 cup cashews
1 cup almond or plant milk
2 tbs nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
Bottled vegan Caesar or Ranch dressing
Cook noodles as directed. In a separate pan cook potatoes, carrots, and onion in a quarter cup of water until tender. In a blender mix cashews, plant milk, spices and nutritional yeast. Let vegetables cool down a bit, then add to blender and blend until smooth and creamy. Add to cooked noodles and mix well. Warm on stove on low temperature until heated through.
When both are done add cauliflower to top of macaroni & cheese and drizzle vegan Caesar or Ranch dressing on top and serve.
