Vegan Cauliflower Kale Chili

This is a delicious hearty chili recipe. It is one of my favorites and a bit different with a hint of cinnamon. Packed with greens and beans, this dish is full fiber and nutrition. It has kale which is a nutrient dense food full of vitamins and minerals and it has cauliflower which is high in fiber and vitamin C. They are both cruciferous vegetable known for their anticancer properties. This dish is great by itself or you can serve over rice or quinoa.

1/2 head cauliflower chopped

2 cups kale chopped

1 cup onion chopped

4 cloves garlic

1 tsp chopped jalapeno

1 can navy beans

1 can diced tomatoes (try fire roasted)

1 tsp paprika

1 tsp chili powder

1 tsp parsley

1 tsp ground cumin

1 tsp cinnamon

1 tsp salt

1/2 tsp pepper

1 tsp agave

1 tsp hot sauce

t tbs lime juice

1 tsp olive oil



Saute garlic, onion and jalapeno in pan. Add cauliflower and kale. Cover and cook in half a cup of water until tender. Next add in all spices and stir. Once fragrant, add beans, diced tomatoes and kale. Add in lime juice, agave and hot sauce. Bring to simmer and let cook 5 to ten minutes. Let cool and add 1 tsp of olive oil and stir. Serve by itself or over rice or quinoa. Enjoy for lunch or dinner with some slice avocado.
