Vegan Lentil Cauliflower Curry

This is one of those warm and comforting curry's. Great with rice, quinoa or by itself. The pleasant aromas and flavor of the Indian spices makes this dish delicious! Curry is a powerhouse of nutrition. This one made with potatoes, chickpeas, peas, spinach, garlic and spices.

3-4 cloves garlic chopped

1 cup onion chopped

1 head cauliflower chopped into bite size pieces

1 tsp cinnamon

1 tsp curry

1 tsp coriander

1 tsp turmeric

1 tsp cumin

1 tsp salt

1/2 tsp Garam Masala (Optional. I prefer Whole Foods brand.)

1 can lentils

1 can diced tomatoes

1 cup coconut or plant milk

2 cups spinach


Saute onion and garlic in a little water. Add cauliflower as you chop them. Cover and simmer 3 minutes. Next, add spices and blend well. Next add lentils, tomatoes and coconut milk. Stir all together cover and bring to simmer for 10 minutes. Add in spinach and stir. Continue on low simmer until cauliflower is cooked through. Serve with rice, quinoa.
