One Pot Vegan Stroganoff

This one pot dish is quick and easy. It is rich and creamy a great comfort food. Packed with onions, garlic and mushrooms, this pasta is a power house of nutrition. After trying many different versions, this is what I came up with and is delicious.

1 cup onion
3-4 cloves garlic
1 cup cup sliced mushrooms
1 tsp paprika
2 tsp nutritional yeast
1/2 tsp thyme
1 tsp salt
1/2 tsp pepper
1 tsp Worcestershire sauce
1 tsp soy sauce
2 cups vegetable broth
1 cup plant milk
1/2 cup plain coconut yogurt
2 1/2 cups pasta
Saute onion, garlic and mushrooms in water. Cook until fragrant. Add spices, Worcestershire and soy sauce. Let simmer a minute. Then add broth, milk and noodles. Mix well and cover. Once it starts to boil, turn to low and let it cook on a low simmer until noodles are tender and liquid is absorbed. When done add yogurt and mix well. The yogurt will add creaminess and give it that traditional sour taste. Serve with some warm garlic bread and salad.
