Raw Hummus

Here is a quick and easy alternative to traditional hummus. It is light goes well with any veggies or fruit slices you like. I personally love raw sweet potatoes and love to cut them into chips. Serve in your salad or on a lettuce wrap or just as your dip.

1 cup raw cashews
1 large zucchini peeled and cut into chunks
2 tbsp Thani (even works without)
1 red large mini sweet pepper
1 lemon
1/2 small onion
1 clove garlic
1/2 tsp salt
2 tbsp nutritional yeast
1/2 tsp paprika
1/4 cumin
In a blender, add cashews. Squeeze juice of lemon into blender. Then, add all other ingredients and blend. Put in serving bowl and sprinkle paprika on top for decoration. Great for snack or to serve on special occasion.
