Raw Tacos

You don't want to miss out on taco night. This version of raw tacos is not only tasty and delicious, but packed with nutrition and easy on digestion. With lettuce as your shell and raw pecan taco meat, you do not have to miss out on your favorite Mexican dish.

6 Romaine lettuce leaves
1 avocado
1/2 onion
1 cup cherry tomatoes
lemon juice
Taco Meat:
2 cups pecans
2 tsp cumin
2 tsp coriander
Dash of natural salt
1 tbsp olive oil
1-2 tbsp water
To make the meat, add pecans to a food processor. Next, add spices and salt. Then add oil and water. Blend well until resembles crumbly beef. Chop vegetables and avocado for toppings. Fill Romaine leaves with meat and sprinkle on toppings. Squeeze lemon or lime juice on top and serve. So easy and delicious.
