Sausage, White Bean and Kale Soup

A hearty and nutritious soup. This is quick and easy with few ingredients. It is made with vegan sausage which gives it a real sausage flavor. There is plenty of sodium in the sausage, so it is not necessary to add salt to this recipe.

2 Field Roast Smoked Apple Sage links

1/2 large onion

4 cloves garlic

1 carrot

1 cup chopped kale

1 can Great Northern Beans

Approximately 4 cups vegetable broth

1 bay leaf

1 tsp Italian spice

Saute onion and garlic in water. Add chopped sausage. Add sliced carrot. Let cook 5 minutes until soft. Then add broth, kale, spices, bay leaf and beans. Cover and simmer until cooked through.
