Vegan Broccoli Cheddar Soup

This is a healthy version of broccoli cheddar soup with cheesy goodness. This dairy free version is packed with nutrition and high in fiber and is one of my favorites.

2 peeled medium potatoes
2 carrots
1 medium onion
1 large head of broccoli
2 cups broth
1/2 cup raw cashews
1 cup plant milk
2 tbsp nutritional yeast
1 tsp salt
1 tbsp organic cornstarch (optional)
1 tbsp water (omit if no cornstarch)
Chop onion, potatoes and carrots in large pieces cook in a small amount of water until soft. Then in a separate pan, chop broccoli and place in pan with a small amount of water and cook until soft. While cooking, add cashews, plant milk, nutritional yeast and salt to blender. Mix cornstarch with cold water in separate bowl and set aside. When vegetables are done cooking and slightly cooled off, add onion, carrot and potatoes to blender. Mix in blender until smooth. At the end pour in cornstarch mix. Once smooth add to pan with broccoli and then pour in broth.
Mix well and heat through until a nice creamy consistency. You can adjust the amount of broth to your preference. Heat through and serve.
