Vegan Cashew Ricotta

This ricotta is a great replacement for ricotta cheese. It is rich and creamy and easy to make.

1 1/4 cups cashews (soaked)
1/2 cup water
1 tbs nutritional yeast
1 tbs lemon juice
1 cloves garlic
1 tsp basil or parsley
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
Soak cashews for 2 hours. To make this thick and creamy it is necessary to soak the cashews. Next add garlic, nutritional yeast and spices. Blend in food processor until smooth and creamy.
