Vegan Chickpea Curry

This is one of those warm and comforting curry's. Great with rice, quinoa or by itself. The pleasant aromas and flavor of the Indian spices makes this dish delicious! Curry is a powerhouse of nutrition. This one made with potatoes, chickpeas, peas, spinach, garlic and spices.

3-4 cloves garlic chopped

1 cup onion chopped

3-4 medium potatoes cubed

1 tsp cinnamon

1 tsp curry

1 tsp coriander

1 tsp turmeric

1 tsp cumin

1 tsp salt

1/2 tsp Garam Masala (Optional. I prefer Whole Foods brand.)

3/4 cup frozen peas

1 can chickpeas

1 can diced tomatoes

1 cup coconut milk

2 cups spinach

Saute onion and garlic in 1/2 cup water while adding potatoes as you chop them. Cover and simmer 3 minutes. Next, add spices and blend well. Next add chickpeas, tomatoes, peas and coconut milk. Stir all together cover and bring to simmer for 10 minutes. Add in spinach and stir. Continue on low simmer until potatoes are cooked through. Serve with rice, quinoa or by itself.
