Vegan Chili

Lentil dishes are easily modified to suit your tastes. Another comfort food made with lentils is a delicious vegan chili. Adding any of your favorite items to make a variety of chili dishes is easy with this recipe. Chili is another one of my favorites and a staple in my house. Nutritious and versatile, this is an easy quick meal for busy nights.



1 can or 1 1/2 cups cooked lentils

1 can pintos or chili beans

1/2 cup onion

4 cloves garlic

1/2 cup sweet mini peppers

1/2 cup chopped zucchini (optional)

1/2 cup chopped mushroom (optional)

1 can tomato sauce

1 tsp chili powder

1 tsp cumin

1 tsp oregano

1/2 tsp coriander

1 tsp salt

1 cup cooked rice or quinao

Optional additions:

1 tsp curry

1 tsp smoked paprika

Black beans

Corn

2 tbs coconut yogurt to cut acidity

Sprinkle with vegan cheddar cheese

Saute all vegetables. Add lentils, beans and tomato sauce. Add spices. Simmer 10 minutes and serve over rice or quinoa.
