Vegan Chocolate Cake

It has been hard to find the perfect chocolate cake recipe that is low in fat and vegan. After a lot of trial and error, I came up with this version of the perfect chocolate cake and made it simple as well. It is light and sweet and super easy to make. This is perfect for any occasion including birthday's or just when you are craving chocolate.


1 1/2 cups flour 1 cup sugar 1/4 cup cocoa 1 tsp salt 1 tsp baking soda 1 cup warm water 1 tablespoon coconut oil 1 tsp balsamic vinegar 1 tsp vanilla 1/4 cup vegan chocolate chips Preheat oven to 350 degrees. Grease a glass 9 x 13 pan with coconut oil. Add all dry ingredients to a bowl. Stir and blend dry ingredients and mix well. Add 1 cup warm water to a measuring cup and add in the coconut oil, vinegar and vanilla. Stir and pour into dry ingredients and mix well. Pour into baking dish and bake about 30 minutes until toothpick comes out clean. Immediately pour chocolate chips on top and wail a moment until they start to melt, then spread on top with a knife like you would for icing. Let cool and serve. This is great for any birthday or occasion.
