Vegan Chocolate Chip Cookies

This is a classic version of chocolate chip cookies. It is a healthier and vegan version using oat and whole wheat flour.

1/2 cup applesauce or 1 large apple peeled and shredded
1/3 cup peanut butter
1/2 cup sugar (you can use coconut, brown or white)
1 tbs ground flax seeds
2 tsp vanilla extract
1 1/3 cup oat flour
1/4 cup whole wheat pastry flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vegan chocolate chips
Preheat oven to 350 degrees. Line baking sheet with parchment paper. Mix apple sauce and peanut butter together. Next, blend in sugar. Add flax seeds and vanilla. Blend well. Next, add oat flour and whole wheat flour. Then, add baking soda and salt. Blend all ingredients together. Lastly, mix in chocolate chips. Form dough into balls and place on baking pan. Flatten with a spoon or fork. Bake for 8-10 minutes. Let cool completely before serving.
