Vegan Lentil Loaf

This is a simple alternative to meatloaf. Healthy and full of fiber made with lentils and rolled oats. Serve with mashed potatoes and veggies and you will have a home cooked meal.


1 can drained or 1 1/2 cooked lentils

1 jar salsa

1 cup rolled oats

BBQ sauce or ketchup

Preheat oven to 350 degrees. Mix all ingredients in an 8x8 glass baking dish. Mix thoroughly, then press into bottom of the pan. Top with thin coat of ketchup or BBQ sauce. Cover with parchment paper and bake for 40 minutes covered, then uncover and bake for 5 more minutes. Let cool down before eating. It will solidify as it cools.
