Vegan Macaroni & Cheese Bake

This yummy version is like the classic Mac & Cheese Bake. The topping made with crushed cashews just make it feel like homemade.

1 lb macaroni
Cheese sauce;
3/4 cup cashews
1 cup plant milk
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
2 tbs nutritional yeast
Topping;
1/2 cup cashews chopped or mashed
1 tbs nutritional yeast
1 tbs bread crumbs
1/2 cup vegan shredded cheddar cheese (optional)
First, cook noodles. While cooking noodles, blend cashews, plant milk and seasoning in blender until smooth. Next make topping; mix cashews, nutritional yeast and bread crumbs in a bowl. Drain noodles and pour in baking dish. Pour in cheese sauce. Mix and blend well. Sprinkle topping on top and top with vegan cheddar cheese. Cover with parchment paper and bake for 15 minutes. Then remove parchment paper and bake an additional 5 minutes. This dish is great served with peas and lentil loaf or you can eat as a main dish.
