Vegan Mushroom Pasta

I love this easy one-pot dish. Packed with nutrition from onions, garlic, mushrooms and spinach, it is full of flavor and hits the spot.

1 cup chopped onion
4 cloves garlic
1 cup sliced mushrooms
2 cups vegetable broth
2 cups whole wheat pasta
1 tsp paprika
1 tbs soy sauce
1 tbs nutritional yeast
1 tsp salt
1/2 tsp pepper
1 cup chopped grape tomatoes
1 cup plant milk
2 cups spinach
Saute onions, garlic and mushrooms in a little water in pan for 3-5 minutes. Add broth and noodles. Then add, spices and soy sauce. Add, tomatoes and milk. Mix through and cover on medium heat and bring to a boil. Then, turn down to low and cook through about 10 minutes. Stirring occasionally. Add spinach and cook another 5 minutes until noodles are done.
