Vegan Nachos Bake

This is always one of those fun family or party meals. When you are not sure what to make and need something easy and delicious this is a quick and versatile recipe. You can substitute with items that you like and have on hand. You can make this with nachos or taco shells or by heating up some soft tortillas which is what I prefer.

1 cup onion chopped
1 can lentils (rinsed and drained)
1 can black beans (rinsed and drained)
1 can pinto beans (rinsed and drained)
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 cup of chopped tomatoes
1/2 jalapeno sliced
2 tbsp of sliced black olives
1/2 cup frozen organic corn (optional)
If using soft tortillas, put them on a baking pan and bake 350 degrees for 5 - 10 minutes until your liking. I prefer mine softer. The longer you leave in the harder and more chip like they are.
You can make it on the stove or in the oven.
Stove top recipe; Heat all ingredients on the stove. Serve over nachos or on the side.
Oven recipe; Line baking sheet with parchment paper, Layer nachos or taco shells on the bottom. Arrange all other ingredients evenly on top. Bake for 15 -20 minutes on 350 degrees.
Toppings go great with this Mexican fiesta. Serve with fresh guacamole, salsa, coconut yogurt and or hummus. We like to drizzle taco or Sofrito sauce on top too. Enjoy this party fun dish.
