Vegan Pancit Canton One-Pot Dish

My teenage daughter is very creative in the kitchen. She found this recipe that is a Philippine dish and she modified and perfected it as plant-based. It has such a savory warm flavor that is just delicious. Packed full of vegetables and cabbage, this is a rich and nutritious dish.

16 oz spaghetti noodles
1/2 head cabbage chopped
2 field roast apple sage sausages chopped
1 medium carrot sliced
1 cup onion chopped
4 garlic cloves minced
1/2 cup frozen peas
1 tbs olive oil
1/4 cup soy sauce
1/4 cup fresh parsley
1/2 tsp pepper
1 tbs brown sugar
2 cups water
Saute onion and garlic in oil on medium heat. Add chopped sausage and cook for two to four minutes. Pour in soy sauce, brown sugar, carrots, peas, cabbage, parsley and water. Let cook for five to ten minutes. Then add noodles and let simmer until noodles are cooked through. Serve and enjoy this delicious Philippine dish.
