Vegan Picadillo

This is one of my favorite dishes. It is also versatile and you can modify and add different ingredients that you like and change just for variety. Packed with nutrition and fiber, lentils are used instead of meat for this authentic dish.

Lentils are a good source of folate, iron, protein and fiber. This is hearty comfort food. Serve over rice or quinoa.



1 1/2 cups cooked lentils or 1 can lentils

1/2 a large onion

4 cloves garlic

1/2 cup sweet mini peppers

1 can diced tomatoes

1/2 cup raisins

1/2 cup chopped olives

Optional additions are chopped zucchini, yellow squash or mushrooms.

1 bay leaf

1 tsp oregano

2 tsp cumin

1/2 tsp nutmeg

1 tsp salt

2 tbs apple cider vinegar

1 tsp brown sugar



Saute vegetables, add cooked lentils or canned lentils, add can of diced tomatoes. Add spices, then remaining ingredients. Simmer 5 to 10 minutes.

Serve over rice or quinoa.
