Vegan Shepherd's Pie

This is a great alternative to the classic Shepherd's Pie. It is also a versatile dish that you can switch up the vegetables based on what you like and what you have on hand. You can use fresh or frozen vegetables. You will just need to have them cooked so they are not hard.

For the mash potatoes;
Vegan Yummy Mash Potatoes
4-6 large potatoes cubed (Peeled optional)
2-3 garlic cloves chopped
1/2 cup almond milk
3 tbsp plain coconut yogurt
1 tsp salt
1/2 tsp pepper
1 tsp garlic salt
Mash potatoes or mix with a hand blender.
For the base;
1 can drained or 1 1/2 cups cooked lentils
1/2 can tomato sauce
1 tbs nutritional yeast (optional)
1 tbs vegan cheese (optional)
1 bag of thawed frozen mixed vegetables
or any combination of cooked or thawed vegetables;
peas
carrots
broccoli
green beans
corn
Preheat oven to 350. Mix lentils, vegetables and tomato sauce in bottom of a 13x9 glass pan. Dollop mash potatoes on top spread evenly. Sprinkle top with nutritional yeast and vegan cheese. Bake 15 minutes uncovered.
