Vegan Vodka Cream Sauce

This is an alternative to the traditional version. You can add vodka to this recipe if you would like to, but it is not needed. You can make this with or without Parmesan cheese. It taste like a nice cream sauce either way.

4 cloves garlic chopped

1 tbs olive or or water

3 tbs tomato paste

1 cup canned coconut milk or

homemade cashew cream (1/2 cup cashews plus 1 cup water blended)

1 tsp salt

1/2 tsp pepper

1/2 tsp red pepper flakes

1/2 cup vegan Parmesan cheese (optional)

Saute garlic in oil or water. Then, add tomato paste. Let cook for 2 minutes. Then add in cream and mix well. Add in spices and let simmer 5-10 minutes. Pour over noodles and mix. Sprinkle vegan Parmesan cheese on top.
