Vegan Yummy Mash Potatoes

This dairy free version of mash potatoes are lower in fat, but just as tasty. Potatoes and sour cream go hand and hand. As an alternative, I use is coconut yogurt instead of sour cream to make them creamy with that little bit of sour , I recommend blending with a hand blender. If you are limited on time or do not have a blender, don't worry they are delicious either way and these potatoes are always a hit.



4-6 large potatoes cubed (Peeled optional)

2-3 garlic cloves chopped

1/2 cup almond milk

3 tbsp plain coconut yogurt

1 tsp salt

1/2 tsp pepper

1 tsp garlic salt

(optional)

vegan shredded cheddar cheese




Place cubed potatoes in a pot with 2 cups of water. Bring to boil, add garlic, then lower heat and simmer until tender. Mash potatoes and stir and/or blend with mixer. Add milk, spices and sour cream. Mix or blend together. (Optional) Top with shredded vegan cheese.
